I'm trying to combine two quarter circles together so I've got half a circle with two colours.

When I click Union or Combine it changes the half circle to either red or yellow.

Yes, Union and Combine both make it into one object. Depending on what's being unioned, it might either make a single path, or 2 or more subpaths in a compound path. Combine always makes compound path made of subpaths and never creates a single path. But either way, it's now one object which can only have one style (style includes fill color).
You're probably looking for Object menu > Group (or there's a button on the command bar :gr: or there's a key shortcut).

Sorry I tried to delete this thread but it wouldn't allow me to. It was "Group" I wanted. lol

Hhmm, you should be able to delete your own messages. But I'm glad you didn't, because this might help someone else someday!
Edit
But probably you can't delete it until it's approved.
