Yes, it's probably the most commonly used font manager for Mac, at least for graphic design pros.

Sorry--I'm sure this has been asked before but didn't bring up anything in a search.
The color palette location and layout is driving me crazy. How can I "undock" it so that it's in a free-floating pane or something that I can dock elsewhere, such as in the side panel?

All the shortcuts in the file you mentioned are available via Edit -> Preferences -> Interface -> Keyboard Shortcuts. No need to edit the file anymore :) On a Mac (or at least Sierra), you still have to edit the files. I can see the shortcuts in the preferences window but cannot change them. Also, ...
