I cant find any Options for Symetry Axes though. Any Tipps on how to achieve this?

Do one side. In your case, you'll need to remove one side.
When you're pretty sure you're happy, just duplicate, flip and Path->Union
If you want to experiment further, Clone and Flip. The mirrored clone then updates with the original. You may well still want to do the Union eventually for the sake of fills.
