I have an image made up of several lines that need to be joined together.
I tried putting an end node on a midpoint of the line and doing ctrl+k, but this isn't working.
When I tried Union - ctrl + +, extra lines formed.
How is this done?

First of all, you only can JOIN a path with another, only if you select the end nodes of both of them, and then use the edit path tool. It generates ONE path.
It's not possible to JOIN TWO (or more) paths using the end node of one and a inner node of the other. It's possible to COMBINE them, or GROUP them. But they will be TWO paths not ONE.
However, it's possible ALIGN and/or SNAP one node of one path, overlaping the inner node of the other. You just have to enable the snaping bar that generally appears as a vertical bar on the left.
To combine them (Ctrl + K), you need to get the paths selected, not just only the nodes. But first, you must align them, and SNAP the nodes as you wish.
Depending of what you want, it's better to group the paths, or combine them or just keep aligned as single paths.
It's up to you

I can't fill color properly the way it is - eg - make a circle and a v (2 connected lines). Put them together. Combine. Color doesn't fill properly. Is there any way to make this work?
I can create separate, complete shapes and set them next to each other to get the fill. Is this the best that can be done?

You don't need to fill colour I assume, you need to add a colour fill to a path, yet you need the path to be a closed one.
(By the fill and stroke panel, Shift+Ctrl+F).
Try to get a new perspective of paths and forget the stroke.
Paths can represent a shape you cut out of paper.
Do you have to connect the last cut with the first?

A circle and a V shape can represent different things.
It can represent the silhouette of a cone, or a triangle shaped hole cut inside a circular "paper".
For the first, you need only half of the circle's "edge", followed by two tangent segments.
For the other, you have to keep in mind that the rendering of compound paths is based on the subpaths direction.
Use the node tool to merge nodes together at the ends of each paths, following one another -like stitching together those cutting lines of a single paper.

I wish to see what are you tryng to achieve, a sample image maybe?
Oh well, I'm aaalways trying to see what ANY user in the forum wants to achieve. A word explanation... it's never enough for me!
- You can duplicate the shapes, and use one for the "filling color" and one for the stroke.
- If a combination it's not what you want you can group them
But It seems that you want to do this drawing in an specific way for a reason that I don't understand. Maybe do you want to save some time work? Not to re-do your artwork?

I attached the flower I'm working on. I used circle and cone to try for a simple explanation, but this is the actual project.

I see that may be complications when trying to get a filled shape, because when making a union of the strokes, Inkscape take some parts of the shape as non-filled regions.
So I'm attaching a trick- proccedure to obtain only the filled shape of the flower using the paintbucket tool

I've avoided some steps, but I think you will understand what It's about.
This procedure may not work for other drawings that you have. Sometimes, the paintbucket tool fails in detecting the gaps. So, sometimes it's better to edit the "Filling" (?) shape, node by node with the
Lazur in you proccedure between the 4 and 5 flower did you use a boolean operation? Because I tried some of them and always had a shape with non-filled regions.

Used only combining and node editing.
Selected the two nodes unconnected and clicked on the merge nodes icon.
There were 2 nodes to be merged though at the fifth stage, not much change later on.
The paint bucket may be more effective though.
-This is how I usually clean double nodes on a path:
select them all, click on the unconnect selected nodes, and then the merge nodes button.
This way the handles represent the original shape much better.-
