So I am very new to InkScape. I am trying to make some sprites for my video game but I am having some trouble.

I created a circle and then modified it to look like a human head. Now every time I create another circle it has the same shape as the human head. Further trouble: I finally adjusted the circle so it almost is a perfect circle but now it's slanted, and every time I create another circle it is slanted. Then when I closed the program and loaded it again, the shape was saved automatically -_-. I was just about to throw in the towel and forget this program altogether because of how frustrated I am but I figure there has to be an easy solution to revert back to a default shape.

Can someone please help me before I lose my mind?

To draw a "round circle":
Use the Circle & Ellipse tool, after clicking (and keeping the mouse button down) the first point press the Ctrl key.
If you want the first point to be the center of the circle press shift as well.

I'm not quite sure exactly what's going wrong. It almost sounds like you might have used the Rectangle tool, and rounded the corners, to get a circular shape....because the Ellipse tool doesn't draw the same shape every time.... Unless you altered the ellipse/circle into an arc or wedge.
