Hi.
In essence we have 3 methods:
1. Bézier paths
2. B-splines
3. Spiro splines
None of them need to be closed - but fill color will go from start-to-end-point:

If your question is about the actual act of drawing with the tool, you can end the path by double-clicking when you place the last node, or pressing Enter/Return just after you've placed it.

Also might be good to ensure the shape control of the pen tool is set to none (at least to start with).
