Pixelmator (via OS X) and Gimp allow Keyboard Shortcuts to be changed. I can't see this anywhere in Inkscape. Does it exist?

You can change keyboard shortcuts, but you have to use a configuration file. See this post by ~suv, which describes how to do it in OS X.
