How do I set a line width at a completely new document?
so that each shape or line that I draw is set in the same line width.

I'd go with this:

Make a line the way you like it with the Pen tool.
Select the line
Double-click the pen tool icon
Tick the radio button for "this tool's own style"
Click the Take from Selection button
