Welcome to InkscapeForum!

Hhmmm.....gum tool....?? My first guess would be Eraser tool, except that it doesn't fill anything. Oooohh ok, I see what you mean. That color only shows up while you're dragging the Eraser tool. It's not permanent and doesn't leave any traces behind. I suppose it's red to make it easy to distinguish it from the object you're dragging it over, while you're using it.

But you can change it, if it annoys you for some reason. First draw some simple shape -- ellipse, rectangle, star. Then fill it with whatever color you want the Eraser tool to use. Leave it selected. Then double-click on the Eraser tool icon, which opens Inkscape Preferences to the Eraser tool settings. Click "This tool's own style" and then click the bar that says "Take from selection". You'll see the indicator displaying the new color.

Is that what you meant?
