I would suggest starting with Help menu > Tutorials > Basic, Shapes, and Advanced. The Advanced one is probably the most important for you, but don't worry, it's not really advanced. It's just an introduction to vector paths.

After that, you could look at this huge listing of tutorials: https://forum.inkscapecommunity.com/index.php They're organized by skill level (and some other things) so you could work your way through. I've read or watched almost every single one, so you can be sure they are decent tutorials. I know some people like to search YouTube for Inkscape tutorials, but it's hard to know which ones are good or not so good.

There are some tutorials on the Inkscape website: https://inkscape.org/gallery/=tutorial/.

Once you start to learn the terminology, the Inkscape manual will start to become more useful. That's in Help menu > Inkscape manual.
