I'm going to apologise in advance for asking what might seem a silly question, but I am new to working with graphics software and ignorant about all the different file types and their properties.
I have been dabbling recently in online logo design competitions and just won one in which the client wants the logo to be saved in .png format as a white image on a transparent background so that he can use it on his new web site, which will be a deep wine color. I have tried saving the image as requested, but when I open the .png file, all I appear to have is a white document... the logo itself has been lost.
Am I missing something in the Inkscape settings, or is it simply not possible to save white on transparent in .png format?

Welcome to InkscapeForum!
If you used Save As cairo .png, you probably have a white background, not a transparent background. Try using File menu > Export Bitmap, instead.

I did as you suggested but, when I tried to open the .png file in MS Paint, all I saw was a plain white document. Is this because of a limitation with MS Paint (which I appreciate isn't the most sophisticated of products), or is this simply becasue it's not possible to save a white image on a transparent background in .png format without losing the image?

I think that MS Paint doesn't support transparency. You can save a white image on a transparent backgroud. The problem is that you need to view it over something that's not white, to see it. Like for example, load it onto the wine colored background you mentioned. Or you could import it back into Inkscape, and change Inkscape's background to something dark and opaque, to see it.
