Hello,
I bring an image onto InkScape, I select path- trace to bitmap. I then check the "Colors" box and select update. Then I select the number of scans, press okay, then return to my image. There are multiple layers, and the corners of each layer is rounded instead of sharp as they should be (The original logo has sharp corners). I then go and delete the layers until I have the single layer alone. When I compare the new vectorized image with the original jpg., the vector always turns out having smooth corners and looks more flow-ey. Is there a way to maintain the sharp edges of the original logo when vectorizing? Thank you!

I wonder if there might be a checkbox you could use (or "un-use")? There might also be something on the Options tab that you could set.

There is a check box at the left bottom side of the first window of Trace Bitmap, that says "smooth" or similar. Test un checking it. Also, in the tab at the right top side there are more options for tracing a drawing.
But It may be other things. Like the size an quality of the original logo. Is a big image. What is the width and height in pixels? Is the jpeg image compressed or with many colors?. AFAIK, Inkscape applies an aliasing to the image before tracing it.
Maybe it's too much but can you share the image you want to trace?

I'm not sure how to attach an image so I sent you a link to the one that I'm trying to vectorize... I tried all that stuff and it still comes out a little weird.

Image is way too small to get a good trace.
Also dont expect a trace to be 100% accurate.

Yes, espermaschine is right.
So, what you'd need to do would be to fire up the Gimp (or any other raster graphics editor), and enlarge the image and add some contrast. Then, if you're lucky, it will work a bit better. It's a trial-and-error process.
It can never be perfect, but playing with the different settings in the different tabs of the trace bitmap dialog can bring some improvement.

Something doesn't work? - Keeping an eye on the status bar can save you a lot of time!

In my opinion thats not good advice.
Upscaling is always problematic but if you have to really do it, better use an upscaling filter (G'MIC has three good ones).
In this case the better solution would be to find out what fonts were used and rebuild (at least parts) of the logo.
There are didicated website for finding out fontnames (e.g. http://www.myfonts.com/WhatTheFont) and they also have a forum with experts who know their fonts by heart. I did that all the time when i recreated old 90ies record covers.
