When I started my inkscape document today, text was normal and would let me make changes, including copying, pasting and duplicating. Now when I try and copy a section of text, the pasted results come out with no infill and wider letters (see below). I have tried using fill and stroke to infill the letters, but then they are much darker and bolder than standard text. Now when I closed the document and reopened it, all my text is in this format. I can't see anyway of returning it to normal text.

And you have no idea what might have happened? Any clues? If you give the text a fill, but remove the stroke, is it still too bold and dark?
What's your operating system and INkscape version?
I did find one bug that might explain the problem: https://bugs.launchpad.net/inkscape/+bug/240382
There are a little over 200 bugs regarding text in Inkscape, so I easily could have missed one. But ~suv will surely know

If you can attach the SVG file, we could confirm it, or search for another explanation. (look below submit button for Upload attachment tab) (or upload anywhere and provide a link)

No, I have no idea what caused the problem - I went to lunch and as soon as I was back the text was different! I am on Windows Vista with Inkscape 0.47.0.9
For the moment I can get round the problem by making the stroke present then turning it off again - inkscape seems to think that the stroke is on when it says it is off.
