Where are the Simplify Options?
I searched trough the web to find any solution but there are none. When I use Simplify it just messes everything up for some reason. So I would like to try to not let it simplify that much but there is no option it just does it. Even Illustrator CS2 had options for this tool. What happened here?

you not clicked Preferences -> Behavior

Simplify also has a dynamic component, check the manual.
