Changing the thickness of my paths using the freehand pencil
I'm trying to draw some art but I can't even figure out how to make the lines on the
bigger! I've checked tutorials, and the guide book but I can't seem to find out how. Is this even possible? Thank you!

When you draw a path with the Pen or Pencil tools, it's automatically stroked with the style that's set in Inkscape Preferences. By default, I'm pretty sure it's black and 1 px width (and no fill, of course). If you want to change the width that one of those tools always draws, in all documents, you can do that in Inks Prefs.
I think most people leave it set at black and 1 px width, and then change the width of the stroke for each path in each document. To change the width of the stroke, go to Object menu > Fill and Stroke > Stroke Style tab > Width.
If you need to have a border with a variable width, you would have to use the Calligraphy tool, which is quite different. (Different in that it automatically draws a closed path with a fill and no stroke.) I think a lot of sketch artists like to use the Calligraphy tool with a graphics tablet which has pressure sensitivity.

Alright, I think I spoke to soon, it won't let me change the width, because the screen is kind of greyish.
What next?

If the screen it grayish, that probably means that the Inkscape window with the canvas is not active. Is there another window open? Only one window can be active at a time. Like maybe the Fill and Stroke dialog? I can't remember if dialogs are docked by default.... Well anyway, you just have to click on a window to make it active.
OH, or do you mean the Stroke Width value is grayed out? That means that you don't have the path selected. Either nothing is selected, or something that doesn't have a stroke is selected.

I'm a noob but I think this is what you are asking: You can change the pen thickness by right-clicking the small number to the right of the Stroke: color indicator in the status area at the bottom. This brings up a popup menu and you can select a different stroke width. Also, CTL+F will open the Stroke and Fill dialog, which allows you some more flexibility in setting the width.

Something doesn't work? - Keeping an eye on the status bar can save you a lot of time!
